Quick one tonight: My Avocado- Chicken on Salad

Tonight I came home late, only had a sandwich throughout the day, skipped lunch for field work appointments and spent one additional hour in traffic jam.

At home I was not in the mood of cooking  anything, especially for me alone tonight. But I decided, my body needs some good and fresh food. So that is what I did and it took me only 20 minutes:


what you need:

Chicken breast

salt and pepper

1 avocado

3 tsp sour cream

1 tsp lemon juice

1 clove of garlic

a hint of cayenne pepper or chili

1 tomato in small quarters

some green salad

olive oil, balsamic vinegar

fresh herbs of your joice

1 tortilla

Salt and pepper your chicken breast, cook in in a pan with olive oil. Meanwhile wash salad, mix olive oil and vinegar, add herbs, pour over salad. Puree avocado with lemon juice, spices and sour cream, ad tomato. Season to taste. Remove chicken breast from pan and keep it warm, place tortilla in pan, cook on both sides for a few minutes until crispy.

Arrange on plate and enjoy your delicious and fast but healthy dinner.
